Zucchini Apple Bread

This lightly sweetened bread is a perfect way to use up that extra zucchini from the garden, and together with the apple, the zucchini makes this cake wonderfully moist.

WET INGREDIENTS
1 cup
tightly packed grated zucchini
1 1/4 cups
tightly packed grated apple (I used Granny Smith)

eggs, beaten
1/2 cup
vegetable oil
3 tablespoon
honey
1 teaspoon
vanilla
DRY INGREDIENTS
1 cup
whole wheat flour
1 cup
all-purpose flour
1 cup
toasted pecans, chopped
3/4 cup
sugar
2 teaspoon
baking powder
1 teaspoon
baking soda
1 teaspoon
cinnamon
1/2 teaspoon
allspice
a dash of nutmeg
1/2 teaspoon
salt
Directions
  • Preheat the oven to 350°F and grease and flour a loaf pan.
  • Mix the wet ingredients together well in a medium bowl.
  • Mix together the dry ingredients in a large bowl until combined.
  • Stir the wet ingredients into the dry ingredients, folding with a rubber spatula until mixture is completely incorporated together.
  • Pour the mixture into the prepared loaf pan and bake until it is golden brown and a toothpick inserted into the centre comes out clean, approximately 40 minutes.
  • Remove from oven, let cool in the pan for 5 minutes, and invert onto a baking rack, removing the loaf pan, to finish cooling before serving.
Pain aux pommes et courgettes

Ce pain légèrement sucré est un excellent moyen d'utiliser ce surplus de courgettes de votre jardin, et avec la pomme, les courgettes rendent ce gâteau merveilleusement tendre.

INGRÉDIENTS HUMIDES
1 tasse
de courgettes râpées, bien tassées
1 ¼ tasse
de pommes râpées et bien tassées (j'ai utilisé la pomme Granny Smith)

oeufs, battus
½ tasse
d'huile végétale
3 cuillères à soupe
de miel
1 cuillère à café
de vanille
INGRÉDIENTS SECS
1 tasse
de farine de blé entier
1 tasse
de farine tout usage
1 tasse
de pacanes grillées, hachées
3/4 de tasse
de sucre
2 c. à thé
de poudre levante (levure)
1 c. à thé
de bicarbonate de soude
1 cuillère à café
de cannelle
1/2 cuillère à café
de piment de la Jamaïque
une pincée de muscade
1/2 cuillère à café
de sel
INSTRUCTIONS
  • Préchauffer le four à 350 °F; graisser et fariner un moule à pain.
  • Mélanger bien les ingrédients humides dans un bol moyen.
  • Mélanger les ingrédients secs dans un grand bol jusqu’à obtention d’un mélange homogène.
  • Incorporer les ingrédients humides aux ingrédients secs, à l’aide d’une spatule en caoutchouc, jusqu' à ce que le mélange soit entièrement homogène.
  • Verser le mélange dans le moule à pain apprêté et cuire au four jusqu' à ce qu'il soit doré et qu'un cure-dent inséré au centre en ressorte propre, environ 40 minutes.
  • Retirer du four, laisser refroidir dans le moule pendant 5 minutes, ensuite renverser sur une grille pour terminer l’étape de refroidissement avant de servir.
